Seasoning:
Season the meat with a pinch of sea salt, like sel gris, to taste. You can add pepper if you like. Keep it light to enjoy the natural flavor of the Wagyu. Season before or after cooking—it’s up to you.
Avoid These Mistakes:
Never defrost A5 Wagyu at room temperature, as its delicate fat melts quickly. Also, never use a microwave to thaw it. Place the meat in the fridge chiller for up to 48 hours to fully defrost. Thicker cuts will need more time.
