Turkey and Veggie Wraps

Ingredients:
✅4 whole-wheat tortillas or wraps (10- to 12-inches)
✅ 8 ounces shaved deli turkey breast
✅ 1 medium avocado, mashed
✅ 2 tablespoons mayonnaise or Greek yogurt
✅1 tablespoon fresh lime juice
✅ Salt and pepper to taste
✅ 4 cups torn or chopped fresh spinach
✅ 1 cup shredded carrots or broccoli slaw mix
✅ 1 English cucumber, cut into thin matchstick slices
✅1 cup halved cherry or grape tomatoes
✅ 1 bell pepper (any color), cut into thin slices
✅½ cup finely shredded Parmesan cheese (optional)
✅ Olive oil and balsamic vinegar (optional)
Instructions:
▶ Prepare the avocado spread: In a small bowl, combine mashed avocado, mayonnaise (or Greek yogurt), lime juice, salt, and pepper. Mix until smooth and creamy.
▶ Assemble the wraps: Spread a couple of tablespoons of the avocado spread over each wrap, leaving a thin border around the edge.
▶ Layer the fillings: On one half of each wrap, layer the turkey, spinach, carrots (or broccoli slaw), cucumbers, cherry tomatoes, and bell pepper.
▶ Sprinkle with Parmesan cheese if desired.
▶ Drizzle (optional): Lightly drizzle with olive oil and balsamic vinegar for extra flavor.
▶ Roll and enjoy: Starting from the edge loaded with turkey and veggies, roll up each wrap tightly. The avocado spread will help "seal" the wrap closed. Cut in half and serve immediately.
