Chicken Malai Kofta

Chicken Malai Kofta

Ingredients:

  • For the Koftas:
    • 500g minced chicken
    • 1/2 cup grated paneer (Indian cheese)
    • 1/4 cup bread crumbs
    • 1/4 cup chopped cilantro
    • 1 green chili, finely chopped
    • 1 tbsp ginger-garlic paste
    • 1 tsp garam masala
    • 1/2 tsp cumin powder
    • 1/4 tsp red chili powder (optional)
    • Salt to taste
    • Oil for frying
  • For the Gravy:
    • 2 tbsp oil
    • 1 large onion, finely chopped
    • 1 tbsp ginger-garlic paste
    • 1 tsp cumin seeds
    • 1/2 tsp turmeric powder
    • 1 tsp coriander powder
    • 1 tsp red chili powder (adjust to taste)
    • 1 cup tomato puree
    • 1 cup heavy cream
    • 1/4 cup chopped cilantro
    • Salt to taste
    • 1/4 tsp garam masala

Instructions:

  1. Koftas: Combine all kofta ingredients in a bowl. Mix well and shape into small balls.
  2. Shallow Fry: Heat oil in a pan and shallow fry the koftas until golden brown. Set aside.
  3. Gravy: In the same pan, heat oil. Add cumin seeds and let them splutter. Add onion and cook until golden brown.
  4. Add ginger-garlic paste and cook for a minute. Add all dry spices (turmeric, coriander, chili powder) and cook for another minute.
  5. Add tomato puree and cook until oil separates. Add salt and cook for 5 more minutes.
  6. Add heavy cream, mix well, and let it simmer for 5-7 minutes. Add garam masala and cilantro.
  7. Gently add the fried koftas to the gravy and let them simmer for a few minutes.
  8. Serve hot with naan or rice.
