Chicken Malai Kofta

Ingredients:

For the Koftas:
- 500g minced chicken
- 1/2 cup grated paneer (Indian cheese)
- 1/4 cup bread crumbs
- 1/4 cup chopped cilantro
- 1 green chili, finely chopped
- 1 tbsp ginger-garlic paste
- 1 tsp garam masala
- 1/2 tsp cumin powder
- 1/4 tsp red chili powder (optional)
- Salt to taste
- Oil for frying

For the Gravy:
- 2 tbsp oil
- 1 large onion, finely chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp red chili powder (adjust to taste)
- 1 cup tomato puree
- 1 cup heavy cream
- 1/4 cup chopped cilantro
- Salt to taste
- 1/4 tsp garam masala
Instructions:
- Koftas: Combine all kofta ingredients in a bowl. Mix well and shape into small balls.
- Shallow Fry: Heat oil in a pan and shallow fry the koftas until golden brown. Set aside.
- Gravy: In the same pan, heat oil. Add cumin seeds and let them splutter. Add onion and cook until golden brown.
- Add ginger-garlic paste and cook for a minute. Add all dry spices (turmeric, coriander, chili powder) and cook for another minute.
- Add tomato puree and cook until oil separates. Add salt and cook for 5 more minutes.
- Add heavy cream, mix well, and let it simmer for 5-7 minutes. Add garam masala and cilantro.
- Gently add the fried koftas to the gravy and let them simmer for a few minutes.
- Serve hot with naan or rice.
